Chicken with Earth’s Grounding Herbs
This recipe was inspired by my Japanese mother when I FaceTimed her on Monday night.
“Mom. How do I prevent chicken from sticking on my stainless steel pan?” Was my inspiring moment that led me to this delicious recipe.
Only 30min later, I was gifted with the smells of savory chicken breast soaked in sautéed onion, coconut oil and fresh herbs from the local, store down the street in Highlands, Denver.
… and no chicken stuck to my stainless steel pan.
So, my “Mom! How do I prevent chicken from sticking on my pan?” ending up emerging into a magical, new, easy recipe.
Not only does this recipe make you feel light, but using coconut oil adds healthy fatty acids, and is great for candida!
Coconut oil is also supposed to help prevent heart disease. So, if you’re not sensitive or allergic to coconut oil, this healthy fat adds a little sweetness to your this recipe.
It also only took about 30min to make, depending on how much anxiety you have (me!) about a chicken being fully cooked or not.
It also ended with my husband coming home after a run and me saying, “Babe! I just cooked this amazing recipe, you’re going to love it and guess what… it only took 30min to make”.
Feel free to also use any other oils, vegetables and herbs into the recipe. My mom also suggested that mushroom would be a great addition, so be create, have fun. Earth wants you to play!
I only had thyme, oregano, sage and the classic salt and pepper, so that’s what I used, and let me tell you… it did not disappoint.

Ingredients:
Keep in mind that all of these ingredients are local and organic. Yes, I feel very privileged, but, friends, I also invest in my foods because good foods are important, y’all! Good food = awakened mind, body and spirit.
Organic and local Chicken breast (4 pieces)
1-2 tbsp Coconut Oil
2 Cups Chicken Broth
1 tbsp Garlic
1 Yellow Onion
Fresh Thymes
Fresh Sage
Dried Oregano
Salt & Pepper
Here’s how to create the magic:
1. Cut up your onion into moon shapes.
2. Heat up your saucepan to medium heat and put 1-2 tbsp of Coconut Oil* on the pan.
3. Once the coconut oil is warm (not too hot), add your garlic until the garlic sizzles.
4. Add the chopped onions to the pan and stir with the garlic until onions are translucent (about 5min)
5. Add in chicken broth and allow broth to soak into onions.
6. On a separate plate, sprinkle salt and pepper on your chicken and lather all over.
7. Place chicken on top of onions, and add in your herbs.
8. Put top on pan and let marinate for 15-20min.
*Feel free to use oil other than coconut oil. For example: Olive oil, ghee, avocado oil.
